The difference between singleplayer menu and multiplayer > local co-op menu is that the first is limited to only 16 mapsize and I think the bots are limited too, whereas in the local co-op you can play around with any size and you can put up to 32 bots, as well as customizing additional server settings. If you would like more custom singleplayer maps you can download custom maps from bf-games, gamebanana, gamefront, moddb, planetbattlefield or fileplanet, and they should appear either in the singleplayer menu or in multiplayer > local co-op, or you can knock yourself out on and download singleplayer modifications of any kind: most are designed for local play anyway (again either singleplayer menu or multiplayer > local co-op is where you access to play the mod, after you activate it from the community > custom games menu). Yeah there is "singleplayer" menu but it's not like a campaign that you would have in more recent games, you'll play the maps offline with bots: the singleplayer is a simplified version of a local co-op game, meant for less powerful computers (so the bots are limited and the map size is 16).
